GENERAL SUMMARY
The Retail Culinary Services Supervisor reports to the Food and Beverage Manager/Executive
Chef. This position supervises the retail culinary service operations at Pueblo Community
College. Assists in menu development, ordering, bi-weekly inventory, scheduling, as well as the
overall planning and management of the food production and service areas of all retail culinary
outlets. This position aids in the coordination and execution of the campus vending program, coffee program, and development of permanent retail culinary service outlets.
This position will supervise and actively assist in the food production and training programs in order to ensure the implementation of culinary standards set forth by the Director of the College Center and Food and Beverage Manager/Executive Chef.
SPECIFIC DUTIES AND RESPONSIBILITIES
1. Provide supervisory leadership in all culinary skills including preparation, quality control, safety, sanitation, and customer service.
2. Menu development and inventory control
3. Staff training and development.
4. Demonstrates and provides training and support to all department staff in excellent customer service techniques.
5. Directs staff in the proper proportioning and packaging of foods.
6. Merchandises the Retail Culinary service areas to maximize product purchases.
7. Assists in the supervision and provides support to a cooking staff, ensuring that tasks are completed in a quality and timely manner.
8. Assists in the ordering and evaluation of all foods and related supplies.
9. Assists in maintaining appropriate inventory levels.
10. Strives to reduce waste and to optimize the profitability of the food service unit.
11. Communicates effectively and enthusiastically with staff, other management team members, and the general public.
12. Works closely with faculty, staff, students and other guests, actively seeking opinions about the culinary service operations in order to document feedback of the operation’s product quality and service for continuous quality improvement.
13. Develops cooking staff in order to increase their efficiency and effectiveness in maintaining set culinary standards.
14. Assist as needed with the catering of events.
15. Evaluates performance of the Retail Culinary Services Production.
16. Enforces college and departmental policies
QUALIFlCATIONS
Required
1. Completion of culinary training at an accredited culinary program or equivalent training and experience.
2. Two years experience preparing meals in a retail food setting.
3. One year supervisory and employee scheduling experience.
4. Knowledge of office and industry software applications.
5. Ability to effectively supervise and train a diverse work staff.
6. Ability to work flexible and demanding hours.
7. Ability to lift fifty pounds.
Preferred
1. Experience within a college campus food setting.
2. Experience with a computerized menu management system.
3. Knowledge of and experience with ordering food and organizing inventory.
4. ServSafe Certification (if the candidate does not have must pass test to receive it within 6 months from date of hire.)
NECESSARY SPECIAL REQUIREMENT
Must successfully pass a pre-employment drug screening and background check as a condition of hire.

Starting Salary Range: $27,000-34,500 dependent upon position, experience, education & funding
